SUGAR COOKIES - Dexey Ann Blaine (1839-1924)

1 cup butter or shortening, softened 1 cup vegetable oil 1 cup confectioners sugar 1 cup granulated sugar 2 eggs 1 tsp vanilla 4 cups plus 2 tbsp all purpose flour 1 tsp salt 1 tsp soda 1 tsp cream of tartar granulated sugar for coating

Cream first four ingredients; then beat in the eggs and vanilla. In a separate bowl combine flour, salt, soda, and cream of tartar; then stir into the creamed mixture. Cover and chill overnight. Form into 1 inch balls, roll in granulated sugar to coat the surface. Place on baking sheet and flatten with the bottom of a glass. Bake 8 to 10 minutes at 350 degrees or until light brown on edge. Yield: approximately 7 dozen cookies.
